In the documentation here:

https://exiftool.org/TagNames/JPEG.html#AdobeCM

This is written:

QuoteThe APP13 "Adobe_CM" segment presumably contains color management information, but the meaning of the data is currently unknown. If anyone has an idea about what this means, please let me know.

I can take a crack at it.  I'm a reluctant color management expert.  :p

I just need a sample file with said metadata to examine.  Can anyone share such a beast?

I only have one sample handy and it won't help much.  Here is a binary dump of the entire AdobeCM segment:

    5266: 41 64 6f 62 65 5f 43 4d 00 03                   [Adobe_CM..]

The question is: What is the 0x0003 for?

I have no correlating data from which to surmise the possibilities, no context.  Can you share the file with me?   - J

Here it is.  The segment is in an attached image, so use the -ee option when extracting.
