Backup/Restore just EXIF data

I would like to be able to backup just the EXIF data from a batch of *.JPG files to individual data files before editing the images.

Then I would like to restore the EXIF data for each file from the corresponding backup.

I haven't really found the correct parameters as the examples just talk about copying from a full image file to another.
