Title: Are there tools to remove default metadata/junk in some file formats?

at least some part of it? below are examples at the start of files:
OPUS : OggS OpusTags Lavf58.71.100 encoder=Lavc58.129.100
MKV : libebml2 v0.21.3 + libmatroska2 v0.22.3 mkclean 0.9.0 o from Lavf58.78.100
