How to set the below Date value in XMP Metadata, I have tried using -xmp:date command but only the first date has applied.

1868-01-07-1970-12-31

How to assign this value as mentioned format.

This seems related to this thread (https://exiftool.org/forum/index.php?topic=11377.0), though it was about Darwin Core, not Dublin Core. At the time, Phil said
