Canon_CameraInfoR6_0x0a5d appears to be the shot number when the camera makes a focus stack. It appears to start at 1 and count up until number of images maximum is reached or infinity focus is reached. In some circumstances, camera might continue to increase focus distance past infinity.

Canon_CameraInfoR6_0x0a61 seems similar and increments for each image in a focus stack (depth composite) as well incrementing for each shot when the shutter button is held down

I looked at your images and data and observed this:
- the numbers in the 6th column look like tens of degrees of pitch (up/down, like an airplane), with zero pointing straight ahead (the horizon would be in the center of the frame), increasing with camera pointing up, and decreasing down from 3600 with camera pointing down
- 287 and 288: the camera has moved and is pointing up with respect to 284-286, which would explain the differences in the 6th column of your data (63 vs 52)
- the numbers in the 5th column look like tens of degrees of roll (tilt, or airplane banking), with zero being level (horizon parallel to long image axis), increasing with camera rolling left (the left side of the camera is lower), and counting down from 3600 with camera rolling right
Thus, image 291 would have been taken with the camera pointing (3600-3486)=114 => 11.4° down, and rolled/tilted/banked 11 => 1.1° to the left. I like "pitch" and "roll" because the definitions are clear (Aircraft principal axes (https://en.wikipedia.org/wiki/Aircraft_principal_axes)), but I'm not sure what people use in photography.

If it does, I'll repeat the experiment with my R6, including left and portrait orientations, pointing straight up (I noticed the viewfinder level isn't stable as you do this), straight down, and upside down (ceiling/floor inverted).

I think you are likely correct. The leg on the right side of my tripod tends to slowly slip.
The Canon terminology matches the "aircraft" terminology, so that simplifies things.

Darn! My R6 doesn't have this tag. I have the latest firmware (1.8.4) and ExifTool 12.76.
Perhaps it's somewhere else, but so far I cannot find another tag with similar values. How did you find where the pitch/roll information was? Or is this tag available only with later versions of EXifTool?
[Update: I tried with the latest ExifTool (12.86), and the R6 doesn't have the Canon_0x4059 tag :( ]
Maybe with -v3 and hex dump it could be found for EOS R6
I made that series of tripod shots this morning and tried to find numbers that roughly changed with the pattern of the tilts
Maybe some of those numbers are already decoded for EOS R6 and the name Canon_0x4059 does not appear in the output. My guess is that 0x4059 is some sort of offset in hexidecimal. It appears that with -v3 there are offsets that start counting at zero and names that start at one so 58 instead of 59 is possible. There appears to me to be a hex dump of the entire makernotes section.
It does not seem to exist for my EOS 80D either.
I am using exiftool 12.86 on my iMac and 12.63 on my Debian desktop.

I'll look at it again. I used the HTMLdump option to look at the raw data.
How did you happen to find that the data was at offset 0x4059? Trial and error?
This is great, thanks. For now I'll decode CameraInfoR6 0x0a5d as SequenceNumber, but I won't decode anything else yet. The CameraInfoR6 is a binary data block which is more prone to model/firmware differences.
However, the Canon_0x4059 data is likely more consistent. I will decode RollAngle, PitchAngle, FocalLength, MinFocalLength and MaxFocalLength. Great.
The one thing you need to try is to put the camera in portrait orientation (roll = 90) then move up and down to test the yaw axis angle.

No yaw angle in portrait mode that I can see. I tilted the camera hand held up and down in portrait mode. The value that I expected to be yaw seems to be always zero. I have no RF lenses, but only EF and EF-S in case that matters.
I tried looking for some panning shots from last year, but so far, they also have zero where I expected yaw.

This morning, I stood next to the street at my house and held the camera in portrait mode and went from East to West through zenith. The last 2 images I held the camera upside down. Camera settings intended to minimize file size. Focus manual and set to clouds to remove a variable. White balance set to daylight.

Gridlines are also a useful way to check that the horizon is level. Many cameras can display an Electronic Level on the screen, which changes from red to green when the camera is straight. Some Canon cameras with In-Body Image Stabilisation (IBIS), such as the EOS R7, also have an auto levelling feature. When enabled, this adjusts the position of the sensor automatically to account for any slight tilt, giving you level photographs.

I'm back at home and have my samples now. I'll retract the SequenceNumber tag I was going to add (CameraInfoR6 0x0a5d) because ExifTool already extracts SequenceNumber with description "Shot Number In Continuous Burst" for R6 files. This number starts at zero, while 0x0a5d starts at 1. Also, I don't have any samples to evaluate the possible difference between these.
It seems to make sense to extract the 5th number as RollAngle and the 6th as PitchAngle. The meanings of these change depending on the camera Orientation, which I think is OK. It took me a while to make sense of the tilt_test2 data, but I think I may understand it now.
