I would be curious to know to which tags the ZS10 assigns the entered name and date of birth.

I think the reviewer may be talking about the face recognition feature. For this, see the Panasonic FaceRecInfo Tags (https://exiftool.org/TagNames/Panasonic.html#FaceRecInfo). Older models without the face recognition stored these in the BabyName and BabyAge tags.
