To print xmp and composite latitude and longitude in one line the -p STR option can be used, but it will ignore other format options. Is it possible to align tag group, latitude and longitude in the print output below?

I don't know exactly what you are talking about, but you may use arbitrary formatting options in the -p output with the advanced formatting feature. Alternatively you may apply any formatting you want to the regular output by creating a user-defined Composite tag (https://exiftool.org/config.html).
