The GPSProcessingMethod is writable.  The EXIF data type is 'undef', but
that just means it isn't plain ASCII.  The value you input is a normal string,
and ExifTool will add the necessary header when it is written.  This looks
like a good tag to store the information you want.

For future questions like this, try reading the
EXIF specification.
