Currently there is no way to start numbering from
1 instead of 0. Let me think about this, perhaps

Exiftool 7.22 (just released) adds a new modifier ('n') for %c that
does what you want:
 -w F%-.4nc.txt # F-0001.txt, F-0002.txt, F-0003.txt ...
