I was wondering, is it possible to strip the image and thumbnail information from input images using ExifTool just like the sample images are modified (https://exiftool.org/sample_images.html)? If so, how do you do this using ExifTool?

You can't use exiftool
to modify the JPEG image, but you could potentially use exiftool to copy
all information to another stripped image.  However, this won't be
a bitwise copy of the exact structure of the original metadata.  For
this, you would need a specialized utility.  The utility I use for the
sample images was something that I scratched up myself.
