I've gone thru exiftool documentation (and FAQ), but found nothing... Related to this: can I assume, that exiftool documentation (commands, options, tags,..) is always up to date according to last exiftool version?

Yes, the documentation should always be up to date, but
occasionally I will add a feature without documenting it
some time to mature before it enters mainstream use.
