I have some movie video files in MKV format that play on VLC, but when listed shoe a title that is nowhere near the macOS filename nor the actual movie itself. How can I change the metadata Title to reflect in VLC properly?

Unfortunately, exiftool isn't able to edit metadata in an MKV file.

You can look in MKVToolNix, which I think has the ability to edit mkv metadata.  Another possibility would be FFMpeg.
