How to set the below Date value in XMP Metadata, I have tried using -xmp:date command but only the first date has applied.

1868-01-07-1970-12-31

How to assign this value as mentioned format.

...where DIR is the name of a directory/folder containing the images.  On Mac/Linux/PowerShell, use single quotes (') instead of double quotes (") around arguments containing a dollar sign ($).
