Copyright Field Issue (XMP:Rights)

I used Bridge to add a rights statement to some PDF files, which includes the copyright symbol ©. When I use EXIFTool to export the metadata to a CSV file an extra character gets added in front of the © symbol.

Any ideas as to why this is happening?

Yes, lots of ideas.  FAQ 10 describes them all in great detail.

...where DIR is the name of a directory/folder containing the images.  On Mac/Linux/PowerShell, use single quotes (') instead of double quotes (") around arguments containing a dollar sign ($).
