Google Photo date not in the metadata

Apologies if this has been covered a million times, but couldn't find it. I have a problem whereby photos appear in the correct timeline in Google Photos, but when I download the file and check the tags via exiftool there is no tag with any corresponding dates. For example the following output is from a picture which sits correctly in google photos timeline on 25/12/2014:

Any ideas how I can extract the google photo datestamp?

You'll have to do a Google Takeout of your images.  That will download the images in their original state with a json copy of the metadata from when the file was uploaded as well as any edits made on the Photos site.  You can then add the necessary data back into the images from the json files.  See this post for one way to do it.
