Delete all meta information except for some selected fields

I want to delete all the exif and meta information in my photos before publishing them in the internet, except for some selected fields, e.g. the exposure information (shutter speed, aperture, iso speed rating and so on) or the focal length. I tried to do this by using the following command (and many variations):

exiftool -all= --ApertureValue --ISO --ShutterSpeedValue test.jpg

The result was a file with no exif data at all. I successfully tried to exclude groups like XMP or EXIF, but it seems to be impossible to exclude only certain fields. Is there an error in my command? Or do you have an idea how I can achieve my goal? I hope that I haven't missed something important in the documentation.

Hi Joe,

The way exiftool currently works, you can not exclude individual tags when
deleting an entire group.  Instead, you have to copy them back in again
using a command like this:
