On bash, I am trying to use a newline as separator for a list-type tag:

$ exiftool -sep $'\n' -XMP-iptcExt:PersonInImage photo.jpg
Person In Image                 : John Smith.Jane Miller

Instead a newline, a dot shows up. Is it possible to use a newline as separator on bash?

An older thread did not reveal what to do on bash.

What you have done works (although it is a new one to me).  The thing is that exiftool filters out newlines in the output to avoid messing up the output formatting.  See FAQ number 21 for help with this.
