trying to use exiftool -all= to delete all data, but it's not working

Also, FileAccessDate is not writable - so I can't change this one using the exiftool.

This seems to be the one google photos uses, but that is a ridiculous way to check for the date created. Of course I'm accessing the file today when I'm uploading it to google photos!
