EXIFTOOL messing up icon thumbnails of Image Files

Hi Guys we work in the Mac environment - here is my issue:

We are using ExifTool to do two things.
1.) Clear ALL existing IPTC etc from digital photos as they get ingested into our workflow
2.) Set Photoshop copyright status tag to Copyrighted

Then with that clean IPTC we populate our own tags via FileMaker and AppleScript etc...

The PROBLEM is that the ExifTool part of the workflow messes up the ICON THUMBNAIL that you can see when you look at the image in a list on the desktop or in a folder in the Finder of Mac OS etc

A typical 3/1 image will look square and wacked out in the ICON THUMBNAIL view.

Here is the line of code we use for ExifTool

[PathToExifTool] -all= --icc_profile:all  -Photoshop:CopyrightFlag=1 -n  -xresolution=300 -resolutionunit=inches -overwrite_original [PathToFile.jpg]

To recap this line clears all metadata, then adds the Photoshop Copyright status, then sets the resolution and inches default also for Photoshop...

Is there a way I can protect the original icon thumbnail of the file by exempting it from the "clear all" function of this script?

FYI Here is a visual example of before and after ICON THUMBNAIL to show you how it gets messed up:
