In my testing and in the wikipedia article, https://en.wikipedia.org/wiki/JPEG_2000#File_format_and_code_stream, .J2K is used for jpeg 2000 codestream files, not jpeg 2000 images. You may want to update the documentation. Thanks for your wonderful product!

...where DIR is the name of a directory/folder containing the images.  On Mac/Linux/PowerShell, use single quotes (') instead of double quotes (") around arguments containing a dollar sign ($).

Yes.  I think you are right.  This will be fixed for ExifTool 11.17
