I have figured out how to modify createdate datetimeoriginal filemodifydate. All good so far.

There is also a "date" and "time" separately under "Pentax" which I cannot modify.

Suggestions?

You should be able to edit them like this, as long as you are using an up to date version of exfitool
exiftool -Pentax:Date=2025:02:22 -Pentax:Time=12:00:00 file.jpg
This is what works on a Pentax sample I have, though it's a really old sample from 2005.

But you should be aware of the "Notes" under these two Pentax tags (see the Pentax tags page)
Quote(changing either Date or Time will affect ShutterCount decryption)

I would suggest not worrying about it. Makernotes tags like these aren't read by most software beyond exiftool.
"It didn't work" isn't helpful. What was the exact command used and the output.
Read FAQ #3 and use that cmd
Please use the Code button for exiftool output

Please include your OS/Exiftool version/filetype

I am using rawtherapee to edit files. I have 2 image source, Pentax and a phone camera. I forgot to adjust the dates on the Pentax camera, so all dates are 15 hours off, and thus showing files in date order (for editing) does not work.

I can adjust the dates accessed by "properties" in Win Explorer. Then when I sort the directory by date, images sort as I wish - those taken at the same time are together. But I cannot figure out the date that Rawtherapee uses. I have fixed every date/time that I can find, and still the original date/time shows up for the image, and sorting by date does not do what I wish. In addition, the rawtherapee documentation does not say which date is used. There are multiple dates and times, but I cannot find a single one with the date which shows up in the rawtherapee directory view.

I dont know Rawtherapee, but it looks like it uses a cache.

Maybe the cache needs to be refreshed/cleared?
